About Your Water Heater Pilot
The water heater thermal coupling is what generally decides if your water heater pilot light will stay on or not. It creates a small amount of electricity in millivolts that is sent to the gas control unit. As long as there's electricity, the gas control valve will stay open for the main burner to ignite and heater the water that passes through the water heater.
The thermal couple has two functions:
Keeps the pilot light lit.
A safety feature in which the thermal couple monitors the gas control valve by letting it know that the flame is on so the main burner can be be turned on.
